I'm currently consulting for a brand-new coffee shop nestled in the picturesque park of Reigate, Surrey. My main responsibilities include optimising the efficiency of the compact yet bustling kitchen, crafting the menu, training staff, managing back-of-house operations, implementing cost-effective measures to minimise waste, and ensuring delicious meals are served using top-quality ingredients. Despite its small size, the kitchen is well-equipped to deliver excellent service efficiently.
In this venture, we've partnered with Winterhalter for top-notch dishwashers, Nisbets for prompt equipment support and fabrication, and opted for Adande refrigeration units to maximise space utilisation—a choice I wholeheartedly endorse due to its durability. Given the operator's expanding business, including kiosks and ice cream vans, investing in a premium combi oven was imperative. After careful consideration, we selected Rational for its state-of-the-art features and ample capacity, ideal for future needs such as overnight steaming or large-scale meal preparation.
The Priory Cafe was just launched this week with a grab-and-go option, and we'll soon unveil the full menu. If you happen to be in the area, I encourage you to visit and experience the stunning design of this location, boasting high ceilings, elegant walls, and captivating views of the park.
